Proudly represents 5 generations of Mezcal producers committed to sharing all his expertise and knowledge to the future generations of his family.
Originally from Santiago Matatlán, a town known as the world capital of mezcal, located 45 km from Oaxaca City and traditionally known for the natural and original cultivation of maguey and the artisanal production of mezcal.
Don Guillermo also contributes to the development of his region, collaborating with some maguey producers who are experts in planting and caring for the original process of the crop.
Don Guillermo's family actively participates in the artisanal production of mezcal.
The children and grandchildren take care of each part of the process: cutting the maguey, cooking, fermenting, distilling and bottling the great IZAGA mezcal. They learn and take care of every detail: temperature, preparation, distillate, and the exact point to achieve a balance between the flavor and aroma of IZAGA™ mezcal..
The women of the family and the community play a very important role in maintaining harmony, caring for their loved ones, and accompanying them during the process of making mezcal. As times grows, women´s involvement in this family tradition grows as well.
From a small palenque with an atmosphere of affection, care, commitment, quality and hard-work; thanks to your preference for Mezcal IZAGA now this family palenque has grown and continues producing a great artisanal mezcal.
