PROCESSES

AGAVE HARVEST

Maturation from 8 to 15 years depending on the type of agave.

OVEN COOKING

Stone cone.

GRINDING CARRIED OUT WITH A QUARRY MILL

Also called "Egyptian Stone", it is crushed with quarry stone.

MUST FERMENTATION

(After grinding) in wooden vats.

DISTILLATION

Once in the vats, it is distilled over low heat in a copper still.
